Are there anyway of editing the themes to fit our needs.. ie take sections off the menu, add bits like google adsense etc.. just we are wanting to take our website from a full blown blog directory to this great portal

Yes, sure.

You can edit TPL files under "themes/<your_theme_here>" folder. That's just HTML there, that you can edit to match your needs.

About removing sections from menu, then you can do it in "Structure & Data" section in admin console.
